- Combine all dressing ingredients in the bowl of a food processor and blend to desired consistency, adjusting seasonings to taste.
- Blanche wax beans in a pot of salted water for approximately 5 minutes or till fork tender. Beans should still have a snap to them when you take a bite.
- Boil whole potatoes until fork tender, then drain and slice in half.
- Place beans, potato halves, and pickles (with a bit of juice) in a large bowl. Pour 1/2 the dressing over the veggies and stir to combine. Add more dressing to taste. Season with salt and pepper as needed and serve warm.
