Kale, Cabbage, and Kohlrabi Slaw with Garlic Greens

INGREDIENTS

1 small head cabbage
1 kohlrabi with leaves
4-5 leaves of kale
1 green garlic (or green onion)
1 Tbsp. vinegar
1 Tbsp. milk
3 Tbsp. mayonnaise
1/2 lime (juice)
dash of sugar
salt and pepper to taste

Directions:
  1. Begin by chopping the kale, cabbage, and the leaves of the kohlrabi into thin strips and tossing them in a large bowl.  I start with the kale and mix thoroughly by hand with each new ingredient so as to “massage” the kale and make it easier to eat.
  2. Cut the kohlrabi into quarters and then slice thin.  Toss in with the greens.
  3. Finely chop the green garlic (or green onion) and add to the slaw along with the vinegar, milk, mayonnaise, and juice of 1/2 a lime.  Sprinkle a dash of sugar over the mixture and then mix thoroughly.
  4. Season with salt and pepper to taste.  Enjoy!
