Citrus Coconut Milk Popsicles


1 can of organic full fat coconut milk

½ cup freshly squeezed orange juice

zest of 2 oranges

zest of ½ lemon

grapefruit segments

3-4 T HGF honey

⅓ cup unsweetened shredded coconut

pinch of salt

Makes 8.


1.  In a blender combine milk, all zest, juice, salt, and honey.  Blend and taste for more sweetener if desired.  Then, with a spoon (do not blend), stir in shredded coconut.

2.  Pour mixture into popsicle mold leaving ¼ at the end to add segments.

3.  Add pieces of grapefruit segments, pushing them down with a skewer or chopstick. Freeze them for at least 8 hours, preferably overnight.

4.  To remove them out of the molds, run them under warm water and popsicles should come right out. ENJOY!
